When separating eggs, why do we break one by one over small bowl , then tranfering each's white to larger one?

Why do we do that?

It's in case one doesn't separate properly and you end up with a broken yolk in your egg whites, which could totally ruin all the egg whites if they're going to be whipped. (egg whites won't whip if there's any yolk in them!)
It also makes it easier to see if a piece of shell gets into your whites.
