Choosing the right Dinnerware Plates
First of all, is your restaurant formal or casual? If you are a casual restaurant serving burgers and fries, China plates are not for you. A good melamine hard plastic plate would work just fine and they are dishwashing safe. Also durable stoneware is an alternative to china as well and look very nice. If your restaurant is super casual, you may opt for disposable plates to eliminate the headache of washing dishes and of breakage to china plates. Many independent restaurants have gone to serving on sturdy disposable plates. There is nothing at all wrong with this if you are a casual foodservice establishment.
If you are a formal dining restaurant or country club, you must have elegant white china to serve on. Hotels as well require china for their guests. Restaurant china has become very durable over the years from top brands like International Tableware, Hall China, Homer Laughlin, Libbey, Anchor Hocking, and many more china manufacturers.
The first thing you need to look at is the type of clay used to make the china plates. The quality of restaurant china is directly related to the type of clay, the glaze, and the firing method used to harden the plates. Non-porous clay provides a higher tensile strength and thermal shock resistance to the china dishes which is critical to keeping your china costs down in a restaurant. Higher tensile strength = less breakage.
Manufacturers that use rolled edges do this to provide additional strength to the china as well. Rolled edge plates are 3 times stronger than non rolled edge dinner plates. Stronger edges = less chipping and breakage = savings.
Certain types of clay are more resilient to microwave action as well, so if your restaurant microwaves the plates, you need to consider this. If your restaurant runs the china plates through a heating machine like pizzas do, this will affect the type of china plates you buy as well.
Overall, I have found International Tableware dinnerware plates to be very strong and chip resistant. Homer Laughlin plates are also of very high quality and strength. If you need clear plates, then Libbey Glass or Anchor Hocking glass plates will get the job done. Just keep in mind that glass and clay based china have different properties altogether.
