Where do Matthew, Mark, or John say they are eyewitness accounts in the actual text?
It was common practice in ancient times to attribute writings to more well-known people in their titles. Moreover, it wasn't until Irenaeus in the 2nd Century that "Luke" and "John" were attributed to those persons, and Papias in the early 2nd Century for "Mark" and "Matthew".
They don't come right out and say it. However, John 21:24 hints at it. Some scholars believe that the "youth" in Mark 14:51 is actually Mark.
If they were just going to arbitrarily choose names to attach to the gospels, why not choose more well-known disciples? Mark was hardly mentioned, and neither was Matthew. Why choose Mark and Matthew? Further, why was there no argument? If it wasn't certain who wrote the gospels, why don't we have other church fathers who insisted that the gospel according to Matthew was actually written by, say, Peter? And the gospel according to Mark was actually written by, say, Andrew? There's no argument. In fact, there's nothing but agreement.
Further, in studying Christian history, we can't even say that the decision was made by a group, because Christianity wasn't that organized! We all know how scattered Christianity was until the Council of Nicaea was convened. Can we say that it was too disorganized to fully define Jesus' role as God in the flesh, but organized enough to have colluded on the authorship of the gospels? Of course not! So we have independent attestation from multiple sources that the gospels were written by Matthew, Mark, Luke, and John, and no disagreement whatsoever. We have the fact that three of them really weren't important in the scheme of things, and whose names are not as well-known as others.
It's my opinion that because of this, we can know who the gospels were written by, without having originals signed by the authors themselves... and without any claims being written inside the gospels themselves. To be honest, if there were such claims, I would be more likely to doubt it, because then it would seem as though such passages were inserted later to lend more credence to the story.
